Whole Wheat Strawberry Banana Bread
- FOR THE STREUSEL:
- 2 Tablespoons Whole Wheat Flour
- 2 Tablespoons Sugar
- 1 teaspoon Cinnamon
- 1/4 cups Chopped Walnuts
- 1 Tablespoon Butter
- FOR THE BREAD:
- 1/2 cups Rolled Oats Ot Multigrain Hot Cereal Mix
- 3/4 cups Milk
- 1-1/2 cup Whole Wheat Flour
- 1/2 cups Flax Seed Meal
- 1/4 cups Brown Sugar
- 1 teaspoon Baking Powder
- 1/2 teaspoons Salt
- 2 whole Overripe Bananas, Mashed
- 2 whole Eggs, Lightly Beaten
- 6 Tablespoons Butter, Melted
- 1-1/2 cup Strawberries, Chopped
- For the streusel, combine flour, sugar, cinnamon, and nuts in a small bowl. Cut in butter until mixture resembles coarse crumbs. Set aside.
- Preheat oven to 350u0b0F. Grease a 9x5 inch loaf pan.
- For the bread, in another small bowl, combine oats/cereal mixture and milk. Let sit for 5 minutes.
- In a medium bowl, combine flour, flax seed meal, brown sugar, baking powder, and salt. Add bananas, eggs, melted butter, and oat/cereal mixture and gently fold until just combined. Gently fold in strawberries.
- Scrape batter into prepared pan and sprinkle with streusel. Bake 50-60 minutes or until top is evenly golden brown. Let cool in the pan for 10-15 minutes. Transfer to a wire rack to cool completely.
