Cauliflower Potato Celery Soup
- 2 Tablespoons Olive Oil
- 1 Brown Onion, Finely Chopped
- 2 cloves Garlic, Finely Chopped
- 1 head (small) Cauliflower, Separated Into Florets, Chopped
- 4 stalks Celery, Chopped
- 4 Potatoes, Peeled And Chopped
- 2 cups Vegetable Broth
- 1 cup Water
- Salt And Ground Black Pepper To Taste
- Heat oil in a large saucepan. Fry onion and garlic until translucent and fragrant. Add cauliflower and celery and cook, stirring occasionally, for about 5 minutes.
- Add potatoes, vegetable broth and water. Cover and simmer on a medium high heat for about 15 minutes, or until vegetables are very tender. Allow soup to cool for 10 minutes, then blend until silky smooth. Season with salt and pepper, top with chopped herbs, seeds or nuts and serve.
