Stir-Fry Beef And Broccoli
- 1 lb. stew meat, cut into 1/2-inch cubes
- 2 to 3 Tbsp. vegetable oil
- 1/2 c. onion, diced
- 1 lb. fresh broccoli, cut into flowerets
- 1/2 c. chicken broth
- 2 Tbsp. soy sauce
- 1 tsp. cornstarch
- 4 medium fresh tomatoes, cut into wedges
- Brown stew meat in hot oil in wok on all sides.
- Remove and drain on paper towel.
- Cook onion in oil until tender.
- Remove and add to beef.
- Set aside.
- Add broccoli and stir-fry until broccoli partially tender.
- Combine broth, soy sauce and cornstarch in small bowl.
- Add reserved beef and onion to broccoli.
- Pour broth mixture over all.
- Stir to mix.
- Lower heat to simmer and simmer for 5 minutes, covered.
- Add tomato wedges and gently mix with other ingredients.
- Cook until tomatoes and just heated through.
- Serve on bed of rice.
