Oatmeal Cookies With White Chocolate & Cashews
- 1/2 cups Butter, Softened
- 3/4 cups Brown Sugar
- 2 whole Eggs
- 2 teaspoons Vanilla Extract
- 1-1/2 cup Old Fashioned Oats
- 1-1/2 cup All-purpose Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 1-1/2 cup White Chocolate Chips
- 3/4 cups Chopped Cashews
- Preheat oven to 375 degrees F.
- Add butter to a mixing bowl and beat with electric mixer until butter is creamed. Add sugar and continue beating until combined. Next add eggs and vanilla until combined. Add oats, flour, baking soda and salt, beating until combined. Fold in white chocolate chips and cashews.
- Scoop or spoon the dough onto a greased or lined baking sheet about 2 inches apart. Bake for 10-12 minutes or until browned around the edges. Cool for 2 minutes on baking sheet and remove to a wire rack to finish cooling.
