Terry'S Jambalaya
- 3 Tbsp. unsalted butter
- 1/2 lb. pure pork smoked sausage or Polish kielbasa, diced into bite size pieces
- 1/2 lb. lean smoked ham, diced into bite size pieces
- 1 lb. boneless, skinless chicken breast, diced into bite size pieces
- 2 bay leaves
- 2 Tbsp. Lea & Perrins Worcestershire sauce
- 1 c. chopped onions
- 1 c. chopped celery
- 1 c. chopped green bell pepper
- 1 Tbsp. garlic, minced
- 1/2 c. tomato sauce
- 1 c. peeled, chopped tomatoes
- 2 1/2 c. chicken broth or stock
- 1 1/2 c. converted, uncooked rice
- Skin snake and cut in 3 and 4-inch pieces.
- Roll in mixture of flour, corn meal, milk and egg. Salt and pepper to taste. Deep fry in hot oil. Serve hot.
