Oatmeal Muffins With Nutella Frosting
- FOR THE MUFFIN:
- 1/2 cups Old Fashioned Oats
- 1/2 cups Buttermilk
- 1/4 cups (or A Little Less) Packed Brown Sugar
- 3 Tablespoons Butter, Melted And Cooled
- 3 teaspoons Egg Whites
- 1 teaspoon Vanilla
- 1/4 cups Whole Wheat Flour
- 1/4 cups All-purpose Flour
- 1 pinch Salt
- 1/2 teaspoons Baking Powder
- 1/4 teaspoons Baking Soda
- FOR THE FROSTING:
- 2 Tablespoons Butter, Softened
- 1/8 cups Powdered Sugar
- 1/4 cups Nutella, Plus A Little More For Good Measure
- Soak oats in the buttermilk until softened, about 30 minutes.
- Combine brown sugar, melted butter, egg whites, and vanilla. Stir until just mixed. In another bowl, combine flours, salt, baking powder, and baking soda.
- Once oats are soft, combine all three mixtures and stir until just mixed.
- Divide into 6 greased muffin tins and bake for about 14 minutes at 375 degrees F, or until it passes the toothpick test.
- Turn the muffins out of the pan and let cool on wire rack.
- While muffins are cooling, beat together softened butter, powdered sugar, and Nutella, until a smooth frosting forms. Make sure the powdered sugar doesn't overpower the taste of the Nutella - add extra Nutella if it does! Frost onto cooled muffins.
