Oatmeal Peanut Butter Cookie Dough Sandwich Cookies
- FOR THE COOKIES:
- 1 cup Butter, Softened
- 1 cup Creamy Peanut Butter
- 3/4 cups Granulated Sugar
- 1-1/2 cup Brown Sugar
- 3 whole Eggs
- 1 teaspoon Vanilla
- 2-1/2 cups Flour
- 2 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 1 cup Oats
- FOR THE FILLING:
- 1/4 cups Butter, Softened
- 3/4 cups Peanut Butter
- 1/4 cups Granulated Sugar
- 1/2 cups Brown Sugar
- 1 cup All-purpose Flour
- 1/2 teaspoons Salt
- 5 Tablespoons Milk
- 1/4 cups Mini Chocolate Chips
- For the cookies: Preheat oven to 375 F.
- In a large bowl, cream together butter, peanut butter and both sugars until light and fluffy. Beat in eggs and vanilla. Slowly add in dry ingredients ending with oats. Stir until combined. Shape dough into 1-inch balls and place on an un-greased cookie sheet 2 inches apart. Bake for 7-8 minutes or until golden. Remove pan from oven and remove cookies to cooling racks. Cool completely before filling.
- For the filling: In a large bowl using an electric mixer, cream together butter, peanut butter and both sugars until blended. Stir in flour and salt until combined. Carefully mix in milk a little at a time until you reach a good spreading consistency. Stir in chocolate chips. Filling will be thick.
- Carefully spread about a tablespoon of dough onto the flat side of one cookie then top with another cookie. Repeat until you've used all of the filling and cookies. Store in an airtight container.
- Makes 24 sandwich cookies.
