Spring Salad With Grapefruit Vinaigrette
- FOR THE SALAD:
- 1 whole Boneless Skinless Chicken Breast
- 1/4 teaspoons Ginger
- 1/4 teaspoons Garlic Powder
- Salt And Pepper, to taste
- 2 Tablespoons Olive Oil
- 1/2 bags Chopped Lettuce, 10-12 Ounce Size Bag
- 1/4 cups Red Onion, Sliced
- 3 whole Green Onions, Chopped
- 1/2 cups Carrots, julienned
- 1/2 whole Grapefruit
- Cheddar Or Blue Cheese
- FOR THE DRESSING:
- 1/2 whole Grapefruit, Juiced
- 1 Tablespoon Olive Oil
- 1 teaspoon Balsamic Vinegar
- 1 teaspoon Honey
- 1 pinch Salt And Pepper
- 1/8 teaspoons Ground Oregano
- 1/4 teaspoons Ginger
- Cube chicken and season it with ginger, garlic powder, salt and pepper. Heat a skillet over medium heat and add the oil. Once oil is heated, add chicken and cook until all of the pieces are well browned on all sides.
- Assemble salad ingredients on serving plates, top with some of the chicken and your choice of cheese.
- Combine dressing ingredients in a sealable container. Shake until well mixed. Pour over salad and enjoy!
