Vegetable Cheese Chowder
- 2 c. boiling water
- 3 chicken bouillon cubes
- 1 c. chopped potatoes
- 1/2 c. chopped carrots
- 1/2 c. chopped celery
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1/4 c. butter or margarine
- 2 c. milk
- 1/2 c. flour
- 1/2 c. grated Cheddar cheese
- 1/2 c. grated Monterey Jack
- 1 Tbsp. parsley
- pepper
- In large pan, combine boiling water with bouillon cubes.
- Then add vegetables and butter.
- Bring to boil; reduce and simmer until vegetables are tender.
- Combine milk and flour in blender until smooth.
- Add to cooked vegetables and cook 3 minutes.
- Add cheese, stirring until melted.
- Add parsley and pepper.
- Serves 4.
