Hearty Minestrone Soup
- 1 pound Hamburger
- 1 whole Onion, Chopped
- 2 whole Carrots, Sliced
- 2 stalks Celery, Sliced
- 2 cans (15 Oz Each) Italian-style Tomatoes, Diced
- 1 can (15 Oz) Red Beans, Drained And Rinsed
- 1 can (15 Oz) Garbanzo Beans, Drained And Rinsed
- 4 cans (15 Oz Each) Beef Broth
- 1/2 teaspoons Basil
- 1/2 teaspoons Oregano
- 1 package 16 Oz Cheese Tortellini, Fresh Or Frozen
- Brown hamburger, onion, carrots and celery together until onion is soft.
- Add tomatoes and break them up if you like. Personally, I like. Big, chunky, slimy tomatoes floating around in my beautiful soup? I think NOT.
- Add beans and broth.
- Simmer till carrots are soft, around 15 minutes.
- Stir in basil and oregano and season with salt and pepper if desired, but go easy on the salt-canned broth has a lot in it.
- About 15 minutes before eating, increase heat to almost boiling. Add tortellini and cook per package directions. I use Costco's Olivier brand 5-cheese tortellini, sold fresh in the deli section. It's amazing!
