Balsamic Spring Mix Salad
- 2 Tablespoons Olive Oil
- 2 Tablespoons Balsamic Vinegar
- 2 Tablespoons Fresh Lemon Juice
- 1/2 Tablespoons Dried Basil
- 1-1/2 Tablespoon Sugar
- 1 clove Garlic, Pressed Or Crushed
- Salt And Pepper, to taste
- 7 ounces, weight Spring Mix Greens (a Little More Than One 5 Oz. Bag)
- Full Fat Feta, Crumbled
- 3 whole Roma Tomatoes, Diced
- For the dressing, whisk together the oil, vinegar, lemon juice, basil, sugar and garlic until dressing is emulsified OR place in a covered container (Tupperware, mason jar) and shake vigorously. Add salt and pepper to taste.
- Immediately before serving, toss the greens, feta (as much or as little as you'd like) and tomatoes with the dressing.
- Notes: I've tried this salad with different shredded cheeses (like in the picture) and fat free feta but it's never as good as the original version. Also, you can use fresh basil, but I always have dried on hand. Finally, the salad does get soggy after it sits, so just dress as much as you need for one meal.
