Creamy Broccoli-Chicken Casserole
- 4 tsp. margarine
- 1/2 c. diced onion
- 3 Tbsp. all-purpose flour
- 2 c. skim milk
- 4 oz. Cheddar cheese, shredded
- 12 oz. skinned and boned cooked chicken, diced
- 2 c. cooked chopped broccoli
- 1 1/2 c. cooked macaroni shells
- 1/2 c. chopped drained pimientos
- 1 oz. slivered almonds
- Preheat oven to 375u0b0.
- In small saucepan, heat margarine until bubbly and hot.
- Add onion; saute briefly (do not brown).
- Add flour and stir quickly to thoroughly combine.
- Remove from heat and gradually stir in milk, stirring until thoroughly blended. Return to heat and cook, stirring constantly, until slightly thickened.
- Add cheese and cook over low heat, stirring occasionally, until sauce is thick and creamy, about 2 minutes.
