Low Fat/Low Sugar Orange Cranberry Bread
- 1-1/2 cup All-purpose Flour
- 1/2 cups Splenda Or Other Artificial Sweetener
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 2 teaspoons Baking Powder
- 4 Tablespoons Sugar, Divided
- 4 Tablespoons Light Butter
- 1 whole Egg
- 1/2 cups Orange Juice
- 1/2 cups Low Fat Milk
- 1 Tablespoon Vanilla
- 1 cup Fresh Cranberries
- In a large bowl, mix together the flour, artificial sweetener, salt, baking soda, baking powder and 3 tablespoons of sugar. Cut in the butter with a pastry cutter or fork until the mixture resembles coarse crumbs. In a separate bowl, mix together the egg, orange juice, milk and vanilla and combine with the dry mixture. Fold in the cranberries and pour the batter into either a nonstick loaf pan or one that's been sprayed with a nonstick spray such as Pam.
- Sprinkle the remaining tablespoon of sugar over the top and bake in a preheated 350u0b0F oven for 1 hour. Allow to cool slightly before slicing and serve warm.
