Baked Onions In Wine Mushroom Sauce
- 1 can or 2 1/2 c. whole drained small white onions
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1 can cream of mushroom soup
- 1/2 c. white wine
- 1/2 c. slivered almonds
- 1/2 c. grated Cheddar cheese
- 4 c. cooked pinto, kidney or black beans
- 1 Tbsp. olive oil
- 1 smallish onion, minced
- 2 to 5 cloves garlic, minced
- 1 or more hot chili peppers, minced
- 1 Tbsp. each: cumin and coriander
- 1 tsp. oregano
- 1 tsp. salt
- black pepper to taste
- In a heavy frying pan, saute onion until soft in olive oil. Add garlic and saute a few more minutes.
- Add spices and chili pepper.
- Add beans.
- Mash with potato masher or the back of a wooden spoon until desired consistency is reached.
- May be pureed in a blender if desired.
