Peaches 'N Cream Cheesecake
- 3/4 c. flour
- 1/2 tsp. salt
- 1 tsp. baking powder
- 1 (3 oz.) pkg. vanilla pudding mix (not instant)
- 1 Tbsp. soft margarine
- 1 egg
- 1/2 c. milk
- 1 (15 oz.) can sliced peaches
- 1 (8 oz.) pkg. cream cheese
- 3 Tbsp. reserved peach syrup
- 1/2 c. sugar
- 1/2 tsp. cinnamon and 1 Tbsp. sugar, mixed
- Combine flour, salt, baking powder, pudding mix, margarine egg and milk.
- Beat at medium speed for 3 minutes.
- Pour into lightly greased 9-inch pie plate.
- Top with sliced peaches.
- Drain and reserve syrup.
- Next combine cream cheese, syrup and sugar.
- Beat for 2 minutes at medium speed.
- Spread on top of fruit, leaving 1-inch margarine around edge.
- Sprinkle cinnamon-sugar mixture on top.
- Bake at 350u0b0 for 30 to 35 minutes.
- Cool completely and refrigerate.
