Ginger Zing Salad
- 2 oranges
- 1 1/2 c. seedless green grapes
- 2 c. fresh strawberries, hulled and halved
- 2 bananas
- 2 Tbsp. orange marmalade
- 1 Tbsp. honey
- 1/3 cup orange juice
- 1 Tbsp. grated fresh ginger
- To section the orange easily, cut a slice off the top and bottom and stand on a cutting board.
- Starting at the top end, cut off peel, exposing the orange segments.
- Continue until orange is completely peeled.then holding orange in your hand, cut out segments from between the membranes.
- Work over a large bowl to catch any juice.
- Add grapes and strawberries.
- Peel and slice bananas.
- Combine well with other fruit.
- Whisk marmalade with honey and juice.
- Stir in the ginger.
- Combine dressing with fruit and let marinate for at least 30 minutes.
- Serve cold or at room temperature.
