Orange “Deuce” Muffins
- FOR THE MUFFINS:
- 1 whole Orange, Including Peel Sliced Into Quarters(remove Seeds)
- 1/2 cups Orange Juice
- 1 whole Egg
- 1/2 cups Butter
- 1-3/4 cup Flour
- 3/4 cups Sugar
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- FOR THE GLAZE:
- 1 cup Powdered Sugar
- 1/4 teaspoons Orange Zest
- 2 Tablespoons Orange Juice, Freshly Squeezed
- Preheat oven to 400 F. Line a 12-count muffin pan with non-stick cooking spray or baking cups and set aside.
- Put orange quarters in a food processor with orange juice and blend until pureed. Add egg and butter into the orange mixture and pulse until blended. Set aside.
- Combine all of the remaining muffin ingredients in a mixing bowl. Mix orange mixture in with the dry ingredients. Fill muffin cups about 3/4 full. Bake for 18 minutes.
- Whisk together the glaze ingredients until smooth. Spread on warm muffins. Serve warm!
