Creamy Chocolate And Orange Mousses
- 4-1/2 ounces, weight Bittersweet Chocolate
- 1 whole Orange, Zest And Juice
- 4 whole Large Eggs, Separated
- 1 pinch Salt
- 1 Tablespoon Superfine Sugar
- Place the chocolate into a large bowl set over a pan of simmering water. Leave it there for a few minutes, until it's pretty much melted.
- Heat the orange juice (microwave is fine) until almost boiling, then strain it into the melted chocolate. Stir until very smooth.
- Take the bowl off the simmering water. Beat the egg yolks into the melted chocolate, one at a time.
- Beat the egg whites along with the salt until very stiff. Fold them and half of the orange zest into the chocolate along with the sugar. Add more zest if you want, but I like it just using half.
- Now, just spoon the mixture into cute little ramekins or espresso cups, and refrigerate until firm!
