Colorful Black Bean Salad
- 15 ounces, weight Can Black Beans, Drained And Rinsed
- 1 cup Corn, Frozen Or Fresh
- 1/2 cups Red Bell Pepper, chopped
- 3 stalks Green Onions, Chopped (optional)
- 1/2 whole Small Red Onion, Chopped
- 1 clove Garlic, Minced
- 1 teaspoon Fresh Basil, Chopped
- 1-1/2 teaspoon Salt
- 1 teaspoon Sugar
- 1/2 teaspoons Black Pepper
- 1/3 cups Red Wine Vinegar
- 1/4 cups Olive Oil
- 1. In a container that has a tight fitting lid, combine beans with corn, pepper, both types of onions, garlic and basil.
- 2. Whisk together remaining five ingredients to make the dressing.
- 3. Pour dressing over beans and veggies, tossing to evenly coat everything.
- 4. Chill in fridge for at least two hours to let flavors fully develop and mingle with each other. Gently shake a few times during the chilling period to keep everything mixing together.
