Stuffed Brisket

- 1/2 jar Italian Dressing
- 1/2 c. Soy Sauce (optional)
- 2 Tbsp. vinegar
- 1 c. water
- 1/2 pkg. bacon
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 Tbsp. salt
- 1 Tbsp. oregano
- 2 Tbsp. Hake Black Pepper
- 2 Tbsp. Garlic Salt
- 1/2 lb. Mushrooms (chopped)
- Trim and make pocket in brisket.
- Marinate in refrigerator overnight in sauce made of Italian dressing, soy sauce, oregano, vinegar, water, and garlic salt.
- Place pan containing all above in oven.
- Bake covered 2 hours at 350 to 375 degrees.
- Remove, uncover and cool for 30 minutes.
- Open pocket and layer with mushrooms, onions, bell pepper and bacon.
- Close pocket.
- Sprinkle Tbsp salt and 2 tsp. black pepper on top surface of brisket.
- Return to oven and bake uncovered for 1 hour at 350 degrees.
- Remove from oven. Slice.
