Almost Summer Strawberry Pie

  1. Arrange half of the sliced strawberries in the bottom of the baked and cooled pie crust.
  2. Add the sugar to the remaining strawberries and mash in a bowl until combined.
  3. Pour the sugar mixture into a saucepan and place over medium heat. Cook stirring often, for approximately 3-4 minutes until the sugar is dissolved and the mixture is hot. In a small bowl stir together cornstarch and water and slowly pour into the sugar/strawberry mixture.
  4. Continue stirring until the mixture is thickened, approximately 8-10 minutes. Remove from the heat and pour into the pie shell.
  5. Cover with plastic wrap and chill in the fridge for 5-6 hours before serving. Serve with lightly sweetened whipped cream or vanilla ice cream.
