Gibbons Girls Cream Centers For Chocolates

  1. Cook sugar, Karo, cream, and salt to soft ball stage (230u0b0F). Pour onto a large slab and let cool slightly. Add butter and flavoring (see flavor guide below) and stir vigorously with a large palette knife, spatula or scraper until creamy. Store in an airtight container until you are ready to roll into balls and dip.
  2. Flavoring guide:
  3. Marshmallow: add 1/4 cup marshmallow cream
  4. Chocolate: add 1/3 cup cocoa
  5. Rum: add 1 cup brown sugar, 2 cups granulated sugar and 1 tablespoon rum flavoring
  6. Maple: add 2 cups brown sugar, 1 gup granulated sugar and 1 tablespoon maple syrup flavoring
