Chopped Salad With Citrus Dressing
- 1 teaspoon Grated Orange Zest
- 3 Tablespoons Apple Cider Vinegar
- 2-1/2 teaspoons Dijon Mustard
- 2 Tablespoons Pure Maple Syrup
- 1/2 teaspoons Freshly Ground Pepper
- 2/3 cups Olive Oil
- 1 bag (about 5 Oz. Size) Spring Mix Lettuce
- 1/2 cups Dried Cranberries
- 1/2 cups Chopped Walnuts
- 2 whole Chicken Breasts, Cooked And Chopped
- 8 slices Thick Sliced Bacon, Cooked And Chopped
- 6 ounces, weight Blue Cheese (I Like Roquefort)
- In a jar, combine orange zest, apple cider vinegar, orange juice, Dijon mustard, maple syrup and pepper. Shake vigorously. Add olive oil. Shake until combined.
- Assemble the salad with lettuce, cranberries, walnuts, chopped chicken, bacon, and blue cheese. Drizzle with dressing and serve!
