Fruit Cake Ii
- 2 1/2 c. flour
- 1 tsp. baking soda
- 2 eggs, lightly beaten
- 2 2/3 c. (28 oz. jar) mincemeat
- 1 can sweetened condensed milk
- 2 c. (1 lb.) mixed candied fruit
- 1 c. walnuts
- 1 c. currants
- 1 c. white raisins
- 1/2 c. sliced almonds
- dash of nutmeg, allspice, ground cloves and cinnamon
- 1 tsp. rum flavoring (optional)
- Combine eggs, mincemeat, condensed
- milk,
- fruit and nuts. Fold in dry ingredients.
- Pour into
- pan.
- Use
- a
- 9-inch spring-form
- pan, butter it.
- Line it with wax paper
- and butter again.
- Bake at 300u0b0 for 2 hours or until center springs
- back when
- touched and top is golden. Cool;
- turn out.
- Remove paper.
