Chocolate Pie
- 10-inch baked pie shell
- 2 eggs, separated
- 1/2 tsp. vinegar
- 1/4 tsp. salt
- 1/4 tsp. cinnamon or vanilla
- 1/2 c. sugar
- 6 oz. pkg. chocolate chips
- 1/4 c. water
- 1 c. whipping cream
- 1/4 c. sugar
- 1/4 tsp. cinnamon
- Preheat oven to 325u0b0.
- Beat egg whites until stiff peaks form. Gradually add vinegar, salt, 1/4 teaspoon cinnamon or vanilla and 1/2 cup sugar.
- Spread in pie shell and bake 15 to 18 minutes. Cool.
- Melt chocolate chips.
- Beat egg yolks.
- Fold yolks and water into chocolate.
- Spread 3 tablespoons chocolate mixture on meringue.
- Whip the cream, gradually adding 1/4 cup sugar and 1/4 teaspoon cinnamon.
- Spread half on chocolate mixture.
- Fold remaining half of cream.
- Spread on top.
- You will have 4 layers. Chill at least 4 hours.
- This pie can be made ahead and frozen.
