Cappuccino Muffins

  1. Preheat oven to 375 degrees F. Spray a 12-count muffin pan with non-stick cooking spray.
  2. In a bowl, combine the first 7 ingredients (flours, sugars, baking powder, cinnamon and salt) and set aside.
  3. In a large mixing bowl combine the instant coffee and milk. Mix in the cocoa powder (if using). Add the melted butter/margarine, egg and vanilla into the coffee mix. Add in shortening and blend a little with an electric hand mixer. Gradually add in the dry ingredient mixture, mixing with the hand mixer until smooth. Fold in chopped chocolate chips (or mini-chocolate chips, if you have them).
  4. Spoon the batter into the muffin pan until evenly distributed. Bake at 375 degrees F for about 17 minutes or until the muffins are springy to the touch. Allow to cool slightly for 5-10 minutes. Then serve warm and enjoy!
