Cappuccino Muffins
- 1-1/2 cup All-purpose Flour
- 1/2 cups Cake Flour
- 1/2 cups Granulated Sugar
- 1/4 cups Brown Sugar
- 2-1/2 teaspoons Baking Powder
- 1 teaspoon Cinnamon
- 1/2 teaspoons Salt
- 1-1/2 Tablespoon Instant Coffee Granules (add A Little More For More Coffee Flavor)
- 1 cup Milk
- 1 Tablespoon Cocoa Powder (optional)
- 1/2 cups Butter Or Margarine, Melted
- 1 whole Egg, Beaten
- 1 teaspoon Vanilla Extract
- 4 Tablespoons Shortening
- 3/4 cups Semi-sweet Chocolate Chips, Roughly Chopped
- Preheat oven to 375 degrees F. Spray a 12-count muffin pan with non-stick cooking spray.
- In a bowl, combine the first 7 ingredients (flours, sugars, baking powder, cinnamon and salt) and set aside.
- In a large mixing bowl combine the instant coffee and milk. Mix in the cocoa powder (if using). Add the melted butter/margarine, egg and vanilla into the coffee mix. Add in shortening and blend a little with an electric hand mixer. Gradually add in the dry ingredient mixture, mixing with the hand mixer until smooth. Fold in chopped chocolate chips (or mini-chocolate chips, if you have them).
- Spoon the batter into the muffin pan until evenly distributed. Bake at 375 degrees F for about 17 minutes or until the muffins are springy to the touch. Allow to cool slightly for 5-10 minutes. Then serve warm and enjoy!
