Chicken Casserole
- 4 c. cubed, cooked chicken
- 2 c. diced celery
- 1/2 c. chopped, toasted almonds
- 1/2 tsp. salt
- 2 tsp. grated onion
- 2 Tbsp. lemon juice (fresh, frozen or canned)
- 1 c. mayonnaise
- 1 can water chestnuts, sliced
- 1 large firm yellow Delicious apple, diced
- 1 small jar pimentos
- 1 c. grated cheese
- 1 c. crushed potato chips
- Cook chicken and celery until tender in water.
- Combine ingredients, except the cheese and potato chips.
- Place in casserole and bake in very hot oven (450u0b0) for 10 minutes.
- Place grated cheese on top of casserole and return to oven for 2 to 3 minutes.
- Place potato chips on top of hot casserole after taking out of oven, so chips won't get too brown.
- This keeps well in the freezer.
- Delicious.
