Broken Glass Cake
- 1 pkg. cherry gelatin
- 1 pkg. orange gelatin
- 1 pkg. lime gelatin
- 1 c. pineapple juice
- 1 envelope unflavored gelatin
- 1 pt. heavy cream
- 1 box graham crackers
- 1/4 c. butter
- 1/4 c. sugar
- Separately prepare 1 package each, cherry, orange and lime gelatin, using 1 cup cold water with each.
- Turn into shallow square dishes.
- Refrigerate overnight.
- Scald pineapple juice and 1/2 cup sugar.
- Prepare 1 envelope unflavored gelatin and 1/4 cup cold water; add to pineapple juice.
- Set aside to cool.
- Whip 1 pint heavy cream until thick.
- Cut firm fruit gelatin into small cubes and fold into whipped cream.
- Fold in juice mixture.
- Roll 1 box graham crackers to fine crumbs.
- Add 1/4 cup butter and 1/4 cup sugar; mix well.
- Press half the crumbs into bottom of buttered pan, reserving spread whipped cream-gelatin mixture over crumbs.
- Top with remaining crumbs.
- Chill until set.
- Cut into squares to serve.
