Sausage And Bean Soup
- 1 lb. Polish kielbasa, thinly sliced
- 2 Tbsp. olive oil
- 3 1/2 c. onions, chopped
- 2 large cloves garlic, minced
- 2 beef bouillon cubes
- 5 c. water
- 2 (16 oz.) cans tomatoes, cut up with liquid
- 3 (16 oz.) cans Great Northern white beans with liquid
- 3 1/2 c. celery, thinly sliced
- 1 c. picante sauce
- 2 tsp. dried basil
- 2 tsp. dried oregano
- In 6-quart Dutch oven, cook sausage (medium heat) until it browns.
- Drain.
- Add olive oil, onion and garlic to sausage.
- Saute until tender.
- Add remaining ingredients to sausage mixture.
- Bring to a boil; reduce heat.
- Simmer 25 to 30 minutes.
- Stir occasionally.
- Serve at once.
- Yields about 6 quarts.
