Granola Parfait

  1. For the granola:
  2. 1. Preheat oven to 325u0b0F degrees.
  3. 2. Line a baking sheet with parchment paper and set aside.
  4. 3. Using a medium saucepan over low heat, combine maple syrup, honey and apple cider and stir for 5 minutes, until smooth.
  5. 4. In a large mixing bowl, combine oats, bran, wheat germ, coconut, sunflower seeds and raisins. Add the syrup over top and stir until well coated.
  6. 5. Pour out onto the parchment paper and smooth out. Cook for 30 minutes, stirring ever 10 minutes.
  7. 6. Makes 6-8 cups.
  8. For the granola parfait:
  9. 1. Mix the blueberries and pistachios through the granola.
  10. 2. Layer the granola with the yogurt. Top with a drizzle of honey.
