Granola Parfait
- FOR THE GRANOLA:
- 1/4 cups Maple Syrup
- 1/2 cups Honey
- 1/4 cups Apple Cider
- 4 cups Oats
- 1/2 cups Bran
- 1/2 cups Wheat Germ
- 1/2 cups Unsweetened Flaked Coconut
- 1/2 cups Sunflower Seeds
- 1/2 cups Raisins
- FOR THE PARFAIT:
- 1 cup Blueberries
- 1/4 cups Pistachios, Finely Chopped
- 2 cups Vanilla Yogurt
- 2 Tablespoons Honey, Drizzled Over Top
- For the granola:
- 1. Preheat oven to 325u0b0F degrees.
- 2. Line a baking sheet with parchment paper and set aside.
- 3. Using a medium saucepan over low heat, combine maple syrup, honey and apple cider and stir for 5 minutes, until smooth.
- 4. In a large mixing bowl, combine oats, bran, wheat germ, coconut, sunflower seeds and raisins. Add the syrup over top and stir until well coated.
- 5. Pour out onto the parchment paper and smooth out. Cook for 30 minutes, stirring ever 10 minutes.
- 6. Makes 6-8 cups.
- For the granola parfait:
- 1. Mix the blueberries and pistachios through the granola.
- 2. Layer the granola with the yogurt. Top with a drizzle of honey.
