Hamburger Minestrone
- 1 pound Lean Ground Meat (hamburger Or Turkey)
- 1/2 cups Chopped Onion
- 1 clove Garlic, Minced
- 6 cups Water
- 28 ounces, weight Diced Tomatoes, Undrained
- 2 whole Potatoes, Peeled And Chopped
- 2 whole Carrots, Chopped
- 2 stalks Celery, Diced
- 2 cubes Chicken Or Beef Bouillon
- 2 teaspoons Italian Seasoning
- 3/4 teaspoons Salt
- 2 whole Zucchini, Chopped
- 1/2 cups Uncooked Macaroni
- In a large stockpot or Dutch oven, cook the meat, onion, and garlic over medium heat until meat is no longer pink. Drain. Add the water, tomatoes, potatoes, carrots, celery, boullion cubes, Italian seasoning, and salt; bring to a boil. Reduce heat and simmer until vegetables are just tender. Add zucchini and macaroni; simmer for additional 15 minutes or until tender.
