Lima Bean Chowder(Real Good)
- 1/2 c. bacon, chopped fine
- 1 large onion
- 3 c. chicken broth
- 1 c. cubed carrots
- 2 c. cubed potatoes
- 2 c. mushrooms, sliced
- 1 1/2 c. lima beans (fordhook)
- 3/4 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. nutmeg
- 1/2 tsp. dill weed
- 1/2 tsp. garlic powder
- 1/2 c. light cream
- 1 1/2 Tbsp. butter or oleo
- Fry bacon in large heavy skillet until brown.
- Saute onions in bacon drippings until transparent.
- Add broth, vegetables and herbs; cover over low heat for 25 minutes.
- Put cream in small amount of hot mixture and add to rest of soup.
- Simmer several more minutes, until soup is piping hot.
- Serve soup hot with a bit of butter and a dash of paprika on each serving.
- You could add some Cheddar.
