Hot Chicken Salad
- 5 half chicken breast, cooked and cut up (about 4 cups)
- 1/2 cup cream of chicken soup, undiluted
- 1 cup chopped celery
- 2 Tbsp minced green onion
- 1 cup sour cream
- 2 Tbsp lemon juice
- 3/4 cup mayonnaise
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 can water chestnuts, drained and cut up
- 1 cup shredded chedder cheese
- 1 small can mushrooms, sliced or stems & pieces
- 2/3 cup coarsely crushed potato chips
- Mix all ingredients except cheese and chips.
- Put into 9 x 13 baking dish.
- Bake 30 minutes at 350u0b0 covered.
- Uncover, sprinkle cheese and chips on top.
- Bake 10 minutes more.
- Until cheese melts.
- Let stand about 10 minutes before serving.
- Serves 8.
