Greek Salad Pizza

  1. In a medium bowl, combine cucumber, green pepper, red onion, tomatoes, feta, olives, oregano, lemon juice, extra virgin olive oil, and pepper. Toss well to combine and set aside.
  2. Preheat a grill pan on medium-high heat. Divide dough into sixths and press out into 8" circles. Grill for 3-4 minutes per side until crust is crispy and it has nice grill marks.
  3. To serve, cut each round of dough into 6-8 pieces with a pizza cutter. Place on a large plate. Top with some salad greens. Place about 1 cup of the veggie salad on the greens. Top with a portion of the chicken.
