Greek Salad Pizza
- 1 Medium Cucumber, Seeded And Diced
- 1 Green Pepper, Seeded And Diced
- 1 Red Onion, Diced
- 4 Plum Tomatoes, Seeded And Diced
- 1/2 cups Feta Cheese, Crumbled
- 1/2 cups Kalamata Olives, Chopped
- 1 Tablespoon Dried Oregano (or 2 Tablespoons Fresh)
- 1 whole Lemon, Juiced
- 3 Tablespoons Extra Virgin Olive Oil
- 1/2 teaspoons Pepper
- 1 whole Pizza Dough, Homemade, Substitute Zest Of 1 Lemon For Garlic
- 4 cups Mixed Baby Salad Greens
- 1 pound Chicken, Grilled And Sliced
- In a medium bowl, combine cucumber, green pepper, red onion, tomatoes, feta, olives, oregano, lemon juice, extra virgin olive oil, and pepper. Toss well to combine and set aside.
- Preheat a grill pan on medium-high heat. Divide dough into sixths and press out into 8" circles. Grill for 3-4 minutes per side until crust is crispy and it has nice grill marks.
- To serve, cut each round of dough into 6-8 pieces with a pizza cutter. Place on a large plate. Top with some salad greens. Place about 1 cup of the veggie salad on the greens. Top with a portion of the chicken.
