Apple Almond Butter Pancakes

  1. In a medium sized bowl, mix together the flour, egg, buttermilk, almond butter, grated apple and cinnamon until creamy and thick.
  2. Over low heat, melt butter on a griddle or large skillet. Drop pancake batter into the skillet by 1/2 cup spoonfuls. Cook for 3-4 minutes on the first side, until bubbles form and stay on the top of the pancake. Then flip and cook for 3-4 minutes or until golden brown on the other side.
  3. Serve with almond butter, any reserved apple, and hot syrup.
  4. Makes 6 large pancakes or 12 small pancakes.
