Mint Oreo Truffles

  1. Crumble or crush mint Oreo cookies (filling and all). Mix that with softened cream cheese to form a dough. Roll into walnut size balls (you should get 32-35 balls). Freeze balls for 1 hour.
  2. Melt white almond bark (I like the Plymouth Pantry brand at Walmart the best) about 3 minutes in the microwave. Check after 2 minutes and go from there. Do not overmelt and "burn" it, as it ruins the taste. Drop balls into melted white bark and roll in bark until coated. Place onto waxed paper to harden. You kind of have to roll the ball off the spoon and make sure ball is coated all the way.
  3. After all balls are coated, you can either use chocolate bark chocolate chips and melt them. Melt those only about 1 1/2 to 2 minues until smooth. Put the melted chocolate bark (or chips) into a sandwich baggie and cut a very small tip of one corner of the bag and drizzle over the hardened white balls.
  4. You can also use mint flavored chips instead of chocolate to give more of a mint flavor. These can also be made with regular or peanut butter Oreos instead of mint. Do not use the double stuff version though.
