Fruity Enchiladas

  1. Preheat oven to 350 degrees. Lightly grease (or butter) a 9x12 baking dish. Boil the water, sugars and butter together for 2-3 minutes and then remove from heat. Fill each tortilla with the pie filling and roll up. Place each "enchilada" in the dish and pour half of the boiled mixture over the "enchiladas." Sprinkle with the cinnamon-sugar and bake for 20 minutes.
  2. After 20 minutes, remove from the oven. Very gently flip each "enchilada" over and pour the remaining boiled mixture over the top. Again sprinkle with cinnamon-sugar and return to the oven for another 20 minutes.
  3. Serve warm with ice cream, whipped cream, or even yogurt.
