Peach Salad With Ginger Dressing
- FOR THE DRESSING:
- 1/2 pounds Carrots, Shredded Then Chopped
- 1 Tablespoon Fresh Ginger, Minced
- 2 cloves Garlic, Minced
- 1/4 cups Fresh Lemon Juice
- 2 Tablespoons Water
- 1 Tablespoon Rice Wine Vinegar
- 1 teaspoon Roasted Sesame Oil
- 1 teaspoon Canola Oil
- 1 teaspoon Agave Syrup
- 2 dashes Sriracha
- 1/4 teaspoons Salt
- FOR THE SALAD:
- 7 ounces, weight Field Greens, Washed
- 2 Ripe Peaches
- 8 ounces, weight Ball Of Fresh Mozzarella Or Goat Cheese
- For the dressing:
- Blend all ingredients in a food processor. If dressing is too thick, thin out the dressing if needed with a little water.
- For the assembly:
- Spread lettuce across a platter. Place peaches all around so they look pretty. Pour liberal amounts of the dressing across the salad and top with pieces of cheese. I just ripped them off with my fingers.
