Peach Sweet Potato Smoothie
- 1/2 whole Roasted Sweet Potato (previously Cooked, Peeled, And Cooled)
- 6 slices Frozen Peaches
- 3/4 cups Frozen Chopped Butternut Squash
- 1/2 cups Walnuts
- 1 whole Peeled Banana
- 2 Tablespoons Ground Flax Meal
- 1 cup Vanilla Rice Milk
- 2 Tablespoons Plain Yogurt
- 1/8 teaspoons Ground Ginger (if Desired)
- 1. Cut the previously roasted and cooled sweet potato in half. Put the other half back in the refrigerator for later use. Cut the remaining half in chunks then put it in a blender.
- 2. Add frozen peach slices, butternut squash, walnuts, banana, ground flax meal, yogurt and milk. Put the lid on and blend until smooth.
- 3. Pour it into your favorite breakfast smoothie glasses. Garnish with ground ginger if desired.
