Company Lasagna
- 2 lb. ground beef or chuck
- 2 tsp. parsley
- 2 (16 oz.) cans whole tomatoes (undrained)
- 2 eggs, beaten
- 1/2 c. grated Parmesan cheese
- 1 lb. sliced Mozzarella cheese
- 2 cloves garlic
- 2 tsp. basil
- 4 (6 oz.) cans tomato paste
- 10 oz. pkg. lasagna noodles
- 2 (12 oz.) cartons cream-style cottage cheese or Ricotta
- 1/2 tsp. pepper
- Cook beef until browned, stirring to crumble.
- Drain well.
- Add garlic, parsley, basil, tomato paste and tomatoes.
- Simmer 15 minutes, stirring occasionally.
- Cook noodles according to package directions; drain.
- Combine eggs, cottage cheese, pepper and Parmesan cheese.
- Stir well.
- Spread 1/2 cup meat mixture into greased 13 x 9 x 2-inch baking dish.
- Layer noodles, cheese mixture, Mozzarella and meat sauce.
- Repeat as desired.
- Cover and bake at 350u0b0 for 30 minutes.
- Let stand 10 to 15 minutes before serving.
