Peach Poppy Seed Muffins
- 2-1/4 cups All-purpose Flour
- 1/4 cups Whole Wheat Flour
- 1 Tablespoon Baking Powder
- 1/2 teaspoons Salt
- 1/4 cups Butter
- 1/2 cups Sugar
- 1 Large Egg
- 1 cup Milk
- 1/2 teaspoons Almond Flavoring
- 1 can (16 Oz. Size) Peaches, Well Drained And Chopped
- 2 Tablespoons Poppy Seeds
- Preheat oven to 400u0b0F. Line a 12-cup muffin tin with muffin liners or spray with non-stick baking spray.
- In a large bowl, whisk together flours, baking powder, and salt. Set aside.
- In the bowl of stand mixer or large bowl with electric mixer, cream butter with sugar until light. Add egg, milk, and almond flavoring. Mix until combined.
- Add flour mixture and mix just until moistened. Gently fold in peaches and poppy seeds.
- Fill muffin tins 3/4 full. Bake 20-25 minutes or until golden brown.
