Chocolate Orange Nut Squares
- FOR THE SQUARES:
- 1 whole Orange
- 1/2 cups Dark Chocolate
- 1/2 cups Butter
- 2 whole Eggs
- 1 cup Brown Sugar
- 1-1/2 cup Flour
- 1 teaspoon Baking Powder
- 3 Tablespoons Cocoa Powder
- 1/2 cups Pecans, Chopped
- FOR THE TOPPING:
- 1 cup Dark Chocolate
- 1 Tablespoon Vegetable Oil
- Preheat the oven to 350 F. Zest and juice the orange and set both aside.
- Place the chocolate and butter into the top of a double boiler (or a stainless steel bowl set over a pot of simmering water) and allow to melt. Stir continuously as it melts.
- In a large bowl, blend the eggs and brown sugar together. Sift the dry ingredients into the egg/sugar mixture and blend well. Next, add the orange zest and the orange juice. Grind the pecans into smaller pieces and add the pecans to the mixture. Fold the melted chocolate in. Pour the mixture into an 8x8 or similar baking dish and bake for 20 minutes or until a toothpick comes out clean when inserted into the center. Remove from the oven and allow to cool before topping.
- Prepare the topping: Combine 1 cup dark chocolate with 1 tablespoon of oil in a microwave safe bowl. Heat it in the microwave for 30 seconds at a time. Stir after every 30 second increment and continue heating until melted and well blended.
- Once cooled, coat the squares with the topping and serve.
