Apple Cinnamon Muffins

  1. Preheat the oven to 400 F.
  2. Combine flours, sugar, cinnamon, baking powder, baking soda and salt in a large bowl.
  3. In a separate bowl combine the butter, applesauce, eggs, yogurt, milk and vanilla extract. Add the wet ingredients into the flour mixture, stirring just until moist. Gently fold in the apples.
  4. Spoon the batter into 18 muffin cups that you've coated with cooking spray. Sprinkle turbinado sugar over the tops of the muffins.
  5. Bake muffins at 400 F for 15-20 minutes, until light golden.
  6. NOTE: This is a thick batter. I used an ice cream scoop to put the batter into the muffin cups and used my fingers to flatten the tops of the batter.
