Apple Cinnamon Muffins
- 1 cup All-purpose Flour
- 1 cup White Whole Wheat Flour
- 1/2 cups Sugar
- 1/2 teaspoons Ground Cinnamon
- 1 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 2 Tablespoons Butter, Melted
- 2 Tablespoons Unsweetened Applesauce
- 2 whole Eggs
- 6 ounces, weight Apple Cinnamon Greek Yogurt
- 1/4 cups Non-fat Milk
- 1 teaspoon Vanilla Extract
- 1 cup Apples, Peeled, Cored And Diced Into Small Pieces
- 1 Tablespoon Turbinado Sugar
- Preheat the oven to 400 F.
- Combine flours, sugar, cinnamon, baking powder, baking soda and salt in a large bowl.
- In a separate bowl combine the butter, applesauce, eggs, yogurt, milk and vanilla extract. Add the wet ingredients into the flour mixture, stirring just until moist. Gently fold in the apples.
- Spoon the batter into 18 muffin cups that you've coated with cooking spray. Sprinkle turbinado sugar over the tops of the muffins.
- Bake muffins at 400 F for 15-20 minutes, until light golden.
- NOTE: This is a thick batter. I used an ice cream scoop to put the batter into the muffin cups and used my fingers to flatten the tops of the batter.
