Peachy Doughnut Muffins
- FOR THE MUFFINS:
- 1-3/4 cup Flour
- 3/4 cups Sugar
- 1-1/2 teaspoon Baking Powder
- 1/2 teaspoons Nutmeg
- 1/2 teaspoons Cinnamon
- 1/4 teaspoons Ginger
- 2/3 cups Milk
- 1/3 cups Oil
- 1 Egg, Lightly Beaten
- 1/2 teaspoons Vanilla
- 1 cup Peeled, Chopped Peaches
- FOR THE TOPPING:
- 1/3 cups Sugar
- 1 teaspoon Cinnamon
- 3 Tablespoons Butter, Melted
- Powdered Sugar Glaze, For Drizzling (optional)
- Preheat oven to 350u0b0F. Line a 12-cup muffin tin with baking liners.
- In a large bowl, whisk flour, sugar, baking powder, nutmeg, cinnamon, and ginger. Make a well in the flour mixture and add milk, oil, egg, and vanilla. Gently whisk (don't vigorously beat) everything together. Stir in peaches.
- Fill muffin cups almost to the top with batter. Bake 20-25 minutes. Cool on wire rack 10 minutes.
- Mix together sugar and cinnamon for topping. Dip the top of each muffin in the melted butter, then the sugar/cinnamon mixture. Sprinkle any remaining sugar/cinnamon mixture over muffins.
- Drizzle with powdered sugar glaze when muffins are cool, if desired.
