Colorful Orange Salad With Mandarin-Cider Vinaigrette
- FOR THE SALAD:
- 8 ounces, weight Salad Greens (I Used A Spring Mix)
- 1 whole Blood Orange
- 1 can (11 Oz. Can) Mandarin Oranges, Reserve Juice
- 1/4 cups Toasted Almonds (or Smoked, Or Candy-coated)
- 4 ounces, weight Gorgonzola Cheese
- 1/2 whole Red Onion, Sliced

- FOR THE DRESSING:
- 3/4 cups Olive Oil
- 1/4 cups Apple Cider Vinegar
- 2 Tablespoons Mandarin Orange Juice
- 1 teaspoon Orange Peel (optional)
- TO MAKE THE SALAD:
- Toss the greens, oranges, almonds, gorgonzola and onions together in a large bowl. Add dressing and toss to coat. Top with more crumbled gorgonzola.
- TO MAKE THE DRESSING:
- Whisk all ingredients together. Add extra salt and pepper at the end to taste.
