Pistachio Fudge
- 3/4 cups Butter
- 1 cup Granulated Sugar
- 3/4 cups Heavy Cream
- 1 pinch Kosher Salt
- 1 package (3.5 Oz. Size) Instant Pistachio Pudding Mix (not Sugar Free)
- 7 ounces, weight Marshmallow Cream (fluff)
- 11 ounces, weight White Chocolate
- 1/4 cups Pistachios, Shelled And Chopped
- 8 ounces, weight Dark Chocolate
- In a large saucepan over medium high heat, mix butter, sugar, heavy cream and salt. Bring to a rolling boil. Set timer and boil for 5 minutes, stirring constantly. Remove from heat.
- In a large heatproof mixing bowl, add pudding mix, marshmallow cream and white chocolate. Pour boiling mixture over these ingredients. Beat for about 1 minute until combined and chocolate is completely melted. Fold in pistachios. Pour into a 9-inch parchment paper-lined square dish.
- Melt dark chocolate (either using the microwave, for 30 second heat bursts at a time or in a double boiler). Spread the melted chocolate on top of the fudge and refrigerate about 2 hours until set. Cut and enjoy.
