Peanut Butter Coffee Cake
- FOR THE TOPPING:
- 1/2 cups Brown Sugar
- 1/2 cups All-purpose Flour
- 1/4 cups Peanut Butter
- 3 Tablespoons Butter
- FOR THE CAKE:
- 2 cups All-purpose Flour
- 1 cup Brown Sugar
- 2 teaspoons Baking Powder
- 1/2 teaspoons Baking Soda
- 1 cup Milk
- 1/2 cups Peanut Butter
- 2 whole Eggs
- 1/4 cups Butter
- For the topping:
- Mix brown sugar and flour in a bowl. Cut in peanut butter and butter till crumbly. Set aside
- For the cake:
- Preheat oven to 375 degrees F. Spray a 13x9 cake pan with non-stick cooking spray.
- Stir together flour, brown sugar, baking powder and baking soda. Add milk, peanut butter, eggs and butter. Beat with a mixer on high speed for 3 minutes.
- Pour the cake batter into the prepared baking dish and sprinkle with topping mixture. Bake for about 30 minutes or until knife comes out clean.
