Peanut Butter & Honey-Chocolate Chip Muffins
- 2 whole Eggs
- 3/4 cups Smooth Peanut Butter
- 2/3 cups Raw Honey
- 1/3 cups Coconut Oil, Softened
- 2 cups Flour
- 1-1/2 teaspoon Salt
- 1 Tablespoon Baking Powder
- 1 cup Vanilla Almond Milk
- 1 cup Chocolate Chips
- Preheat oven to 375u0b0F.
- With a hand mixer, stand mixer or by hand, gently combine eggs, peanut butter, honey and coconut oil until smooth.
- Mix flour, salt, and baking powder. Alternate adding dry ingredients and milk to wet ingredients, mixing gently. By hand, fold in chocolate chips.
- In a muffin tin with liners, use a cookie scooper to fill each liner approximately 2/3 full. Bake for approximately 12-14 minutes, or until toothpick inserted in the center comes out clean.
