Peanut Butter & Honey-Chocolate Chip Muffins

  1. Preheat oven to 375u0b0F.
  2. With a hand mixer, stand mixer or by hand, gently combine eggs, peanut butter, honey and coconut oil until smooth.
  3. Mix flour, salt, and baking powder. Alternate adding dry ingredients and milk to wet ingredients, mixing gently. By hand, fold in chocolate chips.
  4. In a muffin tin with liners, use a cookie scooper to fill each liner approximately 2/3 full. Bake for approximately 12-14 minutes, or until toothpick inserted in the center comes out clean.
