Posole
- 5 pounds Pork Roast, Most Of Fat Removed And Cubed
- 1/4 cups Cooking Oil
- 1 cup Yellow Onion, Finely Chopped
- 4 cloves Garlic, Finely Diced
- 3 Tablespoons All-purpose Flour
- 6 quarts Water
- 1 container Bueno Frozen Red Chile (14oz)
- 1 package Bueno Posole (32oz)
- 2 cubes Knorr Chicken Flavored Bouillon
- 1-1/2 teaspoon Ground Cumin
- 1 Tablespoon Oregano, Crushed
- Sea Salt And Black Pepper To Taste
- You will need a large stock pot (12 quarts or so).
- Pour cooking oil into pot and heat, then add pork meat. Cook on medium-high heat until browned. Add onion and garlic and cook for another 3 to 4 minutes. Sprinkle flour over meat mixture and stir until browned.
- Add water, red chile, posole, bouillon, cumin, oregano, salt and pepper and stir until combined.
- Bring to a boil, then turn the heat down to a simmer and cook for 3 hours, stirring it every now and then.
- Serve with these garnishes:
- Lime or lemon wedges, squeezed into stew
- Diced yellow onion
- Oregano
- Can be enjoyed with:
- Bolillos (Mexican/French rolls)
- Crackers
- flour or corn tortillas
