Posole

  1. You will need a large stock pot (12 quarts or so).
  2. Pour cooking oil into pot and heat, then add pork meat. Cook on medium-high heat until browned. Add onion and garlic and cook for another 3 to 4 minutes. Sprinkle flour over meat mixture and stir until browned.
  3. Add water, red chile, posole, bouillon, cumin, oregano, salt and pepper and stir until combined.
  4. Bring to a boil, then turn the heat down to a simmer and cook for 3 hours, stirring it every now and then.
  5. Serve with these garnishes:
  6. Lime or lemon wedges, squeezed into stew
  7. Diced yellow onion
  8. Oregano
  9. Can be enjoyed with:
  10. Bolillos (Mexican/French rolls)
  11. Crackers
  12. flour or corn tortillas
