Braided Honey Whole Wheat Loaves
- 2-1/2 cups Warm Water
- 1/4 cups Honey
- 1-1/2 Tablespoon Active Yeast
- 1/4 cups Olive Oil (or Any Oil Of Your Choice)
- 2 Tablespoons Soy Liquid Lecithin
- 3 Tablespoons Vital Wheat Gluten
- 6 cups Whole Wheat Flour
- 2 cups White Bread Flour
- 2-1/2 teaspoons Sea Salt
- Preheat oven to 450F (this heat will set the crust, but you won't be baking it at this temperature).
- In a stand mixer combine the water, honey and yeast. Allow yeast to proof for 5 minutes. Add in the oil, lecithin and wheat gluten. Slowly incorporate your flours into the mixture 1 cup at a time until the dough pulls away from the sides of the bowl and is the proper consistency. Add in the sea salt and knead with the paddle attachment for 5 minutes.
- Remove the dough from the mixer and place in an oiled bowl to rise for 45 minutes to an hour. After the dough has risen and is doubled in size, divide into 2 equal sized balls. Divide each half into thirds for your braids or shape into loaves. Place the shaped dough into 2 loaf pans and let rise again for 20-30 minutes.
- Reduce the heat in your preheated oven to 325F and put the loaves into to the oven for 30 minutes. Enjoy!
